Inverness set to get new cafe as popular Highland coffee shop opens new location

Inverness is set to get a new coffee shop on the High Street.

Birch - which already has a location in Skye - will open its doors in early spring offering a variety of speciality coffee and small food offerings.

Based in the unit which previously hosted Los Burrito and Castle Cones, the owner of Birch is looking forward to providing a new cafe offering in the city.

Highland-born Niall Munro (33) said: "It's a super exciting project that we are looking forward to.

"We will have a high focus on coffee with lots of different coffees which will also go into the speciality side.

"We'll also have a small food offering with a sit in space. It's a small shop but we're going to create ample space to sit in and in the warmer months we'll have outdoor seating too.

"It's got a really nice feel about and it will lend itself well to Inverness."

Having travelled back and forth to Inverness from Skye when he was younger, Niall thought the city was the perfect place to open the second unit of his popular coffee offering.

With a background in hospitality and a passion for good food and utilising local produce he hopes Birch will be a hit in the city.

Explaining more about what led him to open his first base in Skye, he said: "Birch came about after spending a lot of time in Melbourne where my sister lives, and I saw how much they appreciated good coffee and brunch.

"My brother also runs a fine-dining restaurant in Skye, so I had experience in hospitality. I have an appreciation for good quality produce, which Skye provides in abundance.

"There was a space in the market for an offering in Skye, and I started with a coffee van and it just grew organically from there.

"We then opened our cafe in Portree and added the brunch element into it.

"The whole ethos of Birch is about utilising what we have locally, including everything down to the ceramics we use."

He added: "Opening a new location is an exciting prospect and it will be nice to spend some more time in Inverness."
