Redshank Catering Co in Inverness Victorian Market Food Hall

All the food lovers out there will be pleased to know that Redshank Catering Co is in a pop-up unit at the Victorian Market Food Hall this weekend.

Serving up seafood dishes, the food offering is an extension of the two vans that it already caters from.

Having started in 2018, the business has grown from strength-to-strength thanks to co-owner Jamie Ross' connection to local fishing boats. He started out as a chef at 15 and then spent time in the fish sector, which has provided him with the links to be able to source local, sustainable, good produce.

Speaking about why he has decided to do the pop up, he joked: "Because the Scottish weather isn't very good at the moment!

"We often get people wanting to try our food, but because we move about in our vans they aren't always able to so.

"Being here in the Food Hall gives people the opportunity to come in and get a bite to eat, and try some other dishes that are more creative and fun as we have the facilities to do so."

Speaking about the food he said: "What makes us unique is our scallops and black pudding in a roll, and our Cullen Skink is always very popular. We also do meaty dishes and vegetarian meals too, so there is something for everyone.

"This week we've had lamb cobbler with parsnip scones, and surf'n'turf which is venison and scallops. It's different here to the van where people can eat right in the venue. It has given us more scope for opportunity.

"We are well known for our fish and chips, but we aren't doing that in here at the moment."

John co-owns the business with his wife Ann Marie, and they currently working on plans to potentially take up a permanent unit in the Food Hall. Watch this space!
