PICTURES: Star chef Tony Singh fires up signature pizzas in aid of Maggie's Highlands

ONE of Scotland's most popular chefs was the special guest at an Inverness pub serving special pizzas for a local cancer charity.

Celebrity chef Tony Singh gave his twist on Black Isle Bar's wood-fired pizzas today, with all the proceeds raised going to support Maggie's Highland.

They joined forces with Tomatin Distillery who took over the Secret Garden bar upstairs to serve special cocktails based on Cù Bòcan – a peated single malt produced at Tomatin distillery.

Mr Singh served two flavour-packed speciality pizzas coined 'Lamb Naanza' and , combining Indian and Italian cuisine.

The pizza features a masala base sauce, spiced lamb meatballs, cheese and chilli onions. The vegetarian option was a tikka-marinated feta, mozzarella, spiced passata, spiced onion and coriander feast.

All of the ingredients were sourced from Black Isle Brewing Company's farm.

Lawrie Wotherspoon. operations director at Black Isle Brewery: "We are really happy to host something here, and working in the food element, with someone like Tony who is big on local produce is great. That is what we are trying to do as a business, try to keep everything as local as possible and grow them ourselves where possible.

"A lot of our pizza toppings come from the farm so it's organic lamb, beef, vegetables ad herbs...so we thought we could bring it all together and put it on a pizza here.

"Having someone like Tony here today is a real bonus."

Mr Singh said: "One of the key things was championing local produce and what they have at the farm is amazing.

"It shows that even fast food can be good, because it's made with great ingredients that are locally, home-grown.

"It's harder for everyone, especially for independent businesses with the supply chain and power...but you are supporting something that is going back into the community, that's what everybody should be doing."

All the proceeds from the special food and drinks will be donated the charity.

The event follows a day serving delicious meals at the Victorian Market, with around 140 portions of banana blossom and punjabi salmon beings served.

Fundraising manager Andrew Benjamin said: "Black Isle Bar have been so generous. They have supplied the produce from their far.

"It's £15 for the pizza, and it all goes to Maggie's so that's just incredible.

"Even yesterday it was really busy at the Victorian Market, so you get great food, new faces that might not know about Maggie's and what we do and hopefully this will give us more visibility and reach more people that might benefit from our help.

"Cù Bòcan have played a really huge part in bringing Tony in.

"The whole collaboration is match made in haven."
