Former Toni & Guy hairdressers in Inverness gets the nod from Highland Council to be converted into a coffee shop and bakehouse with planning permission approval

A former Inverness hairdressers can be converted into a bakehouse and coffee shop.

A planning application, for the change of use of the Bridge Street premises which has been vacant since 2019, has been given conditional approval by Highland Council officials.

According to the decision notice the applicant, Dingwall-based Tristan Aitchison, will need to comply with a specified extraction system and odour control measures.

In addition he is prevented from using a deep fat fryer, without prior written approval of the planning authority in consultation with environmental health, and the area surrounding the ventilation extraction in Bridge Street should be finished to match the paint colour of the nearby units.

In the application, Mr Aitchison proposed creating an open plan commercial kitchen for the production, preparation and sale of hot food – predominantly baked goods such as bread, croissants and pastries.
