Coyote Burger set to open in prime Inverness city centre spot, previously occupied by Jimmy Chung's, overlooking the River Ness

A prime Inverness city centre restaurant space is to be filled by an expanding family-run burger bar.

Coyote Burger, currently based in a smaller outlet on Academy Street, is to take residence in the premises formerly occupied by the Jimmy Chung’s Chinese buffet franchise.

The prominent first floor spot, overlooking the River Ness, was vacated by Jimmy Chung’s in June 2021 with the restaurant never reopening after closure at the beginning of the Covid-19 pandemic.

Back in November last year, we reported that work had begun to prepare the empty Bridge House premises at 27 Bank Street, above Johnny Foxes bar and restaurant, for a new independent tenant.

Coyote initially specialised in coffee and donuts, but has since shifted focus to a full dining menu with emphasis on a variety of burgers, fries, milkshakes and sides.

The firm has applied to Highland Council for planning permission to erect a box sign and illuminated projecting signage at the riverside premises.

The application will be considered under planning officials delegated powers with a standard consultation date ending on February 9.
