The Victorian Market has a resident from over the pond in its Highland Street Food pop-up unit, this week.
The Anderson, is serving up smoked BBQ, Philly Cheese Steak and the ‘best buffalo chicken wings in Scotland’, in the zone created by Highland Food and Drink Trail.
US-born Jim Anderson, has owned The Anderson bar and restaurant in Fortrose for nearly 20 years.
With the winter months bringing less footfall to the area, Mr Anderson thought that the Victorian Market was the perfect opportunity to bring a satellite of his fixed abode to the city centre.
He said: “Footfall is light in the Black Isle at the moment, so we have decided to bring a smaller version of our menu to Inverness.
“We have the best buffalo chicken wings in Scotland, and vegan options available too.
“The ingredients in Scotland are much better than America, so we use Black Isle beef for our range - it makes all the difference.”
After a successful trial in the stall last week, Mr Anderson is hoping for continued success as shoppers grab last minute Christmas gifts.
He added: “We had a great week here, so we are hoping for the same again.
“I also hope that people shop locally this week which will be a help to retailers who have lost business to online shopping.”
Speaking about the Food Trail initiative, Mr Anderson said: “I think this is a fabulous idea.
“We don’t have a food van, so this is great for us. It is also great for locals as they get to experience different food all the time.”
