Redshank Catering Co set to be a permanent resident in the Inverness Victorian Market food hall
A popular catering establishment is set to take up a permanent residence in the Victorian Market food hall.
Redshank Catering Co will be serving up its renown seafood dishes from April 8, with the unit being a further extension of the two vans that it already caters from.
For owners Ann Marie and Jamie Ross, the opportunity to open a full-time base in the heart of the city is all down to their loyal customers.
Mr Ross said: “If it wasn’t from the demand of our customers we wouldn’t be here now!”
Mrs Ross added: “We have never had the opportunity to sit and watch people eating our food, as it is always takeaway or people are going back to their cars, so this is very exciting.
“We’ve been asked lots of times when we are going to open up a restaurant, so this is great as the Victorian Market has such a relaxed feel to it, and people can just come in and listen to music and enjoy the food.
“Our customers will hopefully be very pleased!”
Having a permanent base will allow the Redshank team to be more creative with their menu and offer a variety of different options for seafood lovers. Customers can expect items such as: scallop, black pudding and bacon rolls; Cullen skink; haddock wraps; and mussels on the menu.
“This unit gives us an opportunity to try something else and be more creative and have fun with things we have wanted to do, that we couldn’t do in the trailer,” said Mrs Ross.
The duo are very excited about the potential this opportunity will bring them, and are pleased to be amongst the other food retailers in the Victorian Market.
Mrs Ross said: “It’s nice to be part of this food and drink community, and seeing businesses supporting one another.
“Scotland is renown for food, drink and fun so the Victorian Market food hall is just such an amazing place to be in.
“We are looking forward to seeing who else will come in and who are our neighbours will be!”
Having loyal and trustworthy staff has enabled the business owners to be able to go ahead and open the new venue, and they are very grateful for the team that they have.
Mrs Ross said: “We have only been able to do this because of customers but also because of the team we have already. They have given us the breathing space to be able to work this out and open up.
“We couldn’t get a better crowd of people – we are truly blessed to have them!”
